Serves:
Ingredients
- 1 medium-sized butternut squash, peeled and sliced
- 2 large sweet potatoes, peeled and sliced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 sheet of puff pastry
- 2 tbsp butter
- 2 tbsp brown sugar
Instructions
-
Preheat the oven to 400°F (200°C).
-
In a large bowl, combine the sliced squash and sweet potatoes with olive oil, cumin, cinnamon, nutmeg, paprika, salt, and pepper. Mix well to coat the vegetables evenly.
-
Heat a large skillet over medium heat and add the butter. Once melted, sprinkle the brown sugar evenly over the butter.
-
Arrange the spiced squash and sweet potatoes in a single layer in the skillet, starting from the edge and working towards the center.
-
Cover the skillet with a sheet of puff pastry, tucking in the edges to slightly overlap the vegetables.
-
Bake in the preheated oven for 35-40 minutes, or until the pastry is golden brown and crispy.
-
Remove from the oven and let it cool for a few minutes. Place a large serving plate over the skillet and carefully invert the tarte tatin onto the plate.
-
Serve warm and enjoy!
