Ingredients

  • 1 medium-sized butternut squash, peeled and sliced
  • 2 large sweet potatoes, peeled and sliced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 sheet of puff pastry
  • 2 tbsp butter
  • 2 tbsp brown sugar

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, combine the sliced squash and sweet potatoes with olive oil, cumin, cinnamon, nutmeg, paprika, salt, and pepper. Mix well to coat the vegetables evenly.

  3. Heat a large skillet over medium heat and add the butter. Once melted, sprinkle the brown sugar evenly over the butter.

  4. Arrange the spiced squash and sweet potatoes in a single layer in the skillet, starting from the edge and working towards the center.

  5. Cover the skillet with a sheet of puff pastry, tucking in the edges to slightly overlap the vegetables.

  6. Bake in the preheated oven for 35-40 minutes, or until the pastry is golden brown and crispy.

  7. Remove from the oven and let it cool for a few minutes. Place a large serving plate over the skillet and carefully invert the tarte tatin onto the plate.

  8. Serve warm and enjoy!
