How To Make Smoked Mackerel with Herb & Beet Couscous

Ingredients
- 8 ounces smoked mackerel fillets
- 1 cup couscous
- 1 cup vegetable broth
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 1 small beet, cooked and diced
- 1 lemon, juiced
- Salt and pepper to taste
Instructions

In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.

In a large bowl, combine the cooked couscous, olive oil, parsley, mint, diced beet, and lemon juice. Mix well and season with salt and pepper to taste.

Arrange the smoked mackerel fillets on a serving plate and spoon the herb and beet couscous alongside.
