Ingredients
- 2 pounds lamb breast, bone-in
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, peeled and sliced
- 1 cup dried white beans, soaked overnight and drained
- 4 cups chicken broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- Fresh mint leaves, for garnish
Instructions

Preheat the oven to 325°F (160°C).

Season the lamb breast with salt and pepper.

Heat the olive oil in a large oven-safe pot over medium-high heat. Add the lamb and brown on all sides, about 5 minutes per side. Remove the lamb from the pot and set aside.

In the same pot, add the onion and garlic. Cook until softened, about 5 minutes. Add the carrots and cook for another 3 minutes.

Add the soaked beans, chicken broth, tomato paste, thyme, and rosemary to the pot. Stir to combine.

Return the lamb to the pot and bring to a simmer. Cover with a lid and transfer to the preheated oven.

braise the lamb in the oven for 2.5 to 3 hours, until the meat is tender and easily pulls away from the bones.

Remove the pot from the oven and let it rest for 10 minutes. Skim off any excess fat from the surface.

Serve the braised lamb breast with beans and carrots, garnished with fresh mint leaves.
