Ingredients

  • 2 pounds lamb shoulder, cut into chunks
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 2 cups beef or vegetable broth
  • 1 cup red wine
  • 1 bay leaf
  • 1 sprig of rosemary
  • 2 cans haricot beans, drained and rinsed
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. Preheat the oven to 325°F.

  2. Heat olive oil in a large oven-safe pot over medium heat. Season the lamb with salt and pepper, then sear it in the pot until browned on all sides. Remove the lamb and set aside.

  3. In the same pot, add the onion, carrots, celery, and garlic. Cook until vegetables are softened.

  4. Sprinkle flour over the vegetables and stir to coat. Cook for another minute.

  5. Add the lamb back to the pot, along with the broth, red wine, bay leaf, and rosemary. Bring to a simmer.

  6. Cover the pot and place it in the preheated oven. Cook for 1.5 to 2 hours, or until the lamb is tender.

  7. Remove the pot from the oven and stir in the haricot beans. Return to the oven and cook for another 15 minutes.

  8. Remove the bay leaf and rosemary sprig before serving. Adjust seasoning with salt and pepper, if needed.
