Ingredients

  • 4 cod fillets (about 6 ounces each)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 can (14 ounces) butter beans, rinsed and drained
  • 1 cup chicken or vegetable broth
  • 1 tablespoon fresh mint leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Season the cod fillets with salt and pepper on both sides.

  2. In a large skillet, heat the olive oil over medium heat. Add the cod fillets and cook for 3-4 minutes on each side until golden brown. Remove the cod from the skillet and set aside.

  3. In the same skillet, add the diced onion and minced garlic. Cook for 2-3 minutes until softened.

  4. Add the butter beans to the skillet and stir to combine.

  5. Pour in the chicken or vegetable broth and bring to a simmer. Cook for 5 minutes to allow the flavors to meld together.

  6. Return the cod fillets to the skillet, nestling them among the butter beans.

  7. Cover the skillet and simmer for 10-12 minutes, or until the cod is cooked through and flakes easily with a fork.

  8. Sprinkle the fresh mint leaves over the top of the dish.

  9. Serve the braised cod with butter beans and mint hot, with some of the cooking liquid spooned over the top.
