Ingredients
- 4 lamb shanks
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup red wine
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon balsamic vinegar
- 2 sprigs fresh rosemary
- Salt and pepper, to taste
Instructions

Preheat the oven to 325°F (165°C).

Heat olive oil in a large oven-safe pot over medium-high heat. Sear the lamb shanks until browned on all sides. Remove from the pot and set aside.

In the same pot, add the onion, garlic, carrots, and celery. Cook for 5 minutes until softened.

Add the red wine and simmer for 2 minutes to cook off the alcohol.

Stir in the beef broth, tomato paste, and balsamic vinegar. Bring to a simmer.

Return the lamb shanks to the pot and add the rosemary sprigs.

Cover the pot with a lid and transfer to the preheated oven. Cook for 2.5 to 3 hours or until the lamb is tender and falls off the bone.

Remove the pot from the oven and let the lamb shanks rest for 10 minutes before serving.
