How To Make Herby Fish Fingers with Chinese-Style Rice

Ingredients
- 500g white fish fillets, cut into fingers
- 1 cup bread crumbs
- 2 tbsp fresh herbs (such as parsley, dill, or cilantro), chopped
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 2 cups cooked rice
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp vegetable oil
- 1/2 cup frozen mixed vegetables, thawed
Instructions

Preheat the oven to 200°C (400°F).

In a shallow dish, combine bread crumbs, fresh herbs, garlic powder, paprika, salt, and black pepper.

Dip each fish finger into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere.

Place the coated fish fingers onto a baking sheet lined with parchment paper.

Bake in the preheated oven for 15-18 minutes, or until the fish is cooked through and crispy.

In a separate pan, heat vegetable oil over medium heat. Add the cooked rice and sauté for 2-3 minutes.

Add soy sauce, oyster sauce, and frozen mixed vegetables to the rice. Stir-fry for an additional 3-4 minutes until everything is well combined and heated through.
