Ingredients

  • 1 lb sausage, casings removed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 tbsp cold unsalted butter, diced
  • 1/2 cup milk
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish.

  2. In a large skillet, cook the sausage over medium heat until browned and cooked through. Remove from the skillet and set aside.

  3. In the same skillet, sauté the onion and garlic until softened.

  4. Add the cooked sausage back to the skillet, along with the frozen peas and corn. Cook for an additional 2-3 minutes until heated through. Remove from heat.

  5. In a separate bowl, whisk together the flour, Parmesan cheese, baking powder, salt, and black pepper.

  6. Add the butter to the flour mixture and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.

  7. Stir in the milk until just combined.

  8. Spread the sausage and vegetable mixture evenly in the greased baking dish.

  9. Drop spoonfuls of the flour mixture on top of the sausage mixture.

  10. Brush the beaten egg over the cobbler topping.

  11. Bake for 25-30 minutes until the top is golden and the filling is bubbly.

  12. Serve hot and enjoy!
