How To Make Spiced Indian Crackers (Mathri)

Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon carom seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon fennel seeds
- 1/2 teaspoon salt
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 4 tablespoons ghee (clarified butter)
- Water, as needed for kneading
- Oil, for frying
Instructions

In a large mixing bowl, combine the all-purpose flour, carom seeds, cumin seeds, fennel seeds, salt, turmeric powder, and red chili powder.

Add the ghee to the flour mixture and rub it in with your fingertips until it resembles breadcrumbs.

Gradually add water, a little at a time, and knead the mixture into a stiff dough.

Divide the dough into small portions and roll each portion into a thin circle or rectangle.

Prick the rolled dough with a fork to prevent it from puffing up during frying.

Heat oil in a deep pan or kadhai over medium heat. Once the oil is hot, fry the rolled dough pieces until golden and crispy.

Remove the crackers from the oil and drain them on a kitchen towel to remove excess oil.

Allow the crackers to cool completely before serving.
