How To Make One-Pan Lamb with Hasselback Potatoes

  • 4 lamb chops
  • 4 large potatoes
  • 2 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1 teaspoon of dried rosemary
  • Salt and pepper, to taste


  1. Preheat the oven to 400°F (200°C).

  2. Slice the potatoes into thin slices, about 1/8 inch apart, leaving the bottom intact.

  3. Place the potatoes in a baking dish and drizzle with olive oil.

  4. Season the lamb chops with salt, pepper, minced garlic, and dried rosemary.

  5. Heat a large oven-proof skillet over medium-high heat and sear the lamb chops for 2-3 minutes per side.

  6. Transfer the lamb chops to the baking dish with the potatoes.

  7. Bake in the preheated oven for 50-60 minutes, or until the lamb is cooked to your desired doneness and the potatoes are crispy.

  8. Serve the lamb chops on top of the hasselback potatoes and enjoy!
