Ingredients

  • 4 bavette steaks (about 1 pound each)
  • 1 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 4 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper, to taste

Instructions

  1. Preheat grill or grill pan to high heat.

  2. Season the bavette steaks with salt and pepper on both sides.

  3. In a bowl, combine the parsley, cilantro, garlic, red wine vinegar, olive oil, dried oregano, and red pepper flakes. Mix well to combine.

  4. Grill the bavette steaks for about 4-5 minutes on each side for medium-rare, or adjust cooking time to desired doneness.

  5. Remove the steaks from the grill and let them rest for a few minutes.

  6. Slice the steaks against the grain into thin strips.

  7. Serve the bavette slices with a generous drizzle of chimichurri sauce.
