Ingredients
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 garlic cloves, minced
- 2 cups leftover lamb, thinly sliced
- 1 cup sugar snap peas
- 3 tbsp soy sauce
- 1 tbsp honey
- 1 tsp cornstarch
- Salt and pepper, to taste
Instructions

Heat the oil in a wok or large skillet over high heat.

Add the bell peppers, onion, and garlic. Stir-fry for 2-3 minutes, until the vegetables start to soften.

Add the leftover lamb and sugar snap peas. Stir-fry for another 2-3 minutes, until the lamb is heated through and the snap peas are tender-crisp.

In a small bowl, whisk together the soy sauce, honey, and cornstarch until smooth. Pour the sauce into the pan and stir to coat everything evenly.

Cook for a minute or so, until the sauce thickens and the vegetables are fully coated.
