Ingredients
- 2 cups shredded leftover lamb
- 2 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 potato, peeled and diced
- 1 can of diced tomatoes
- 2 cups of beef broth
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions

Heat the olive oil in a large pot over medium heat.

Add the onion and garlic and cook until onion is translucent.

Add the carrots, celery, and potatoes and cook for 5 minutes.

Add the leftover lamb, diced tomatoes, beef broth, thyme, salt, and pepper.

Bring the stew to a boil, reduce heat and simmer for 1 hour.

Serve hot with crusty bread.
