Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 celery stalk, chopped
  • 1 carrot, chopped
  • 1 cup dried lentils
  • 4 cups vegetable broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion, garlic, celery, and carrot. Sauté until tender, around 5 minutes.

  3. Add lentils, vegetable broth, bay leaves, and thyme. Bring to a boil, then reduce heat to low. Cover and simmer for 40 minutes, or until lentils are tender.

  4. Remove bay leaves and season with salt and pepper to taste.
