- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 celery stalk, chopped
- 1 carrot, chopped
- 1 cup dried lentils
- 4 cups vegetable broth
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions

Heat olive oil in a large pot over medium heat.

Add onion, garlic, celery, and carrot. Sauté until tender, around 5 minutes.

Add lentils, vegetable broth, bay leaves, and thyme. Bring to a boil, then reduce heat to low. Cover and simmer for 40 minutes, or until lentils are tender.

Remove bay leaves and season with salt and pepper to taste.
