  • 1 cup dried lentils
  • 1 cup diced cooked ham
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the lentils under cold water and drain well.

  2. In a slow cooker, combine the lentils, diced ham, chopped onion, diced carrots, diced celery, minced garlic, chicken broth, dried thyme, and bay leaf. Season with salt and pepper to taste.

  3. Cover and cook on low heat for 6 hours or on high heat for 4 hours, until the lentils are tender.

  4. Remove the bay leaf and discard. Taste and adjust the seasonings if necessary.

  5. Ladle the soup into bowls and garnish with fresh parsley. Serve hot.
