How To Make Lentil and Kale Soup

  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 cup dried lentils, rinsed and drained
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 bunch kale, stems removed and leaves chopped
  • Salt and pepper to taste


  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and cook until onions are translucent.

  2. Add carrots and celery, and cook for another 5 minutes.

  3. Add lentils, vegetable broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until lentils are tender.

  4. Add kale to the pot and cook for another 5-10 minutes, until kale is tender.

  5. Season with salt and pepper to taste.

  6. Serve hot, garnished with chopped fresh parsley if desired.
