How To Make Lentil and Kale Soup
This hearty soup is packed with protein and vegetables, perfect for a healthy and satisfying meal.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 cup dried lentils, rinsed and drained
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 bay leaf
- 1 bunch kale, stems removed and leaves chopped
- Salt and pepper to taste
Instructions

Heat olive oil in a large pot over medium heat. Add onion and garlic, and cook until onions are translucent.

Add carrots and celery, and cook for another 5 minutes.

Add lentils, vegetable broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until lentils are tender.

Add kale to the pot and cook for another 5-10 minutes, until kale is tender.

Season with salt and pepper to taste.

Serve hot, garnished with chopped fresh parsley if desired.
