How To Make Tomato Basil Soup with Bay Leaf

A rich and flavorful soup made with tomatoes, fresh basil, and a hint of bay leaf.

Serves:

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (28 oz) whole peeled tomatoes
  • 1 tsp sugar
  • 2 cups vegetable broth
  • 2 bay leaves
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until softened.

  2. Add tomatoes with their juice and sugar. Break tomatoes into smaller pieces using a wooden spoon.

  3. Stir in vegetable broth, bay leaves, and salt and pepper. Bring to a boil then reduce heat to low and simmer for 30 minutes.

  4. Remove bay leaves and stir in fresh basil. Allow soup to cool slightly before using an immersion blender to purée it.

  5. Serve hot with a side of bread or croutons.
