Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1/4 cup of diced red onion
  • 1/4 cup of diced celery
  • 1/4 cup of diced red bell pepper
  • 1/4 cup of chopped parsley
  • 2 tablespoons of lemon juice
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 8 slices of whole wheat bread
  • 4 lettuce leaves

Instructions

  1. In a bowl, combine chickpeas, red onion, celery, red bell pepper, parsley, lemon juice, olive oil, salt, and pepper. Mix well.

  2. Toast the bread slices and place a lettuce leaf on each slice.

  3. Place a generous amount of chickpea salad on one slice of bread and cover with the other slice.

  4. Cut the sandwich in half and serve.
