How To Make Vegetarian Chickpea Salad Sandwich Recipe

Ingredients
- 1 can of chickpeas, drained and rinsed
- 1/4 cup of diced red onion
- 1/4 cup of diced celery
- 1/4 cup of diced red bell pepper
- 1/4 cup of chopped parsley
- 2 tablespoons of lemon juice
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 8 slices of whole wheat bread
- 4 lettuce leaves
Instructions

In a bowl, combine chickpeas, red onion, celery, red bell pepper, parsley, lemon juice, olive oil, salt, and pepper. Mix well.

Toast the bread slices and place a lettuce leaf on each slice.

Place a generous amount of chickpea salad on one slice of bread and cover with the other slice.

Cut the sandwich in half and serve.
