How To Make Vegetarian Portobello Mushroom Panini Recipe
A delicious vegetarian sandwich with meaty portobello mushroom, melted cheese and fresh veggies.
Serves:
Ingredients
- 4 portobello mushroom caps
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 red bell pepper, sliced
- 1 small red onion, sliced
- 4 ciabatta rolls, sliced
- 1/2 cup pesto
- 4 slices provolone cheese
- Fresh basil leaves
Instructions

Preheat the grill or grill pan.

In a small bowl, whisk together the balsamic vinegar, olive oil, garlic, salt and pepper.

Brush the mushroom caps with the mixture and grill for 5-7 minutes on each side until tender.

Brush the bell pepper and onion slices with the mixture and grill until tender.

Spread the pesto on each sliced ciabatta roll.

Layer the grilled mushroom caps, bell pepper, onion, provolone cheese and fresh basil leaves on the bottom half of the ciabatta roll.

Close the sandwich with the top half of the ciabatta roll.

Serve hot.
