Ingredients

  • 6 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1/4 cup diced red bell pepper
  • 2 tbsp chopped fresh parsley
  • 1 tbsp Dijon mustard
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 8 slices of bread
  • Lettuce leaves

Instructions

  1. In a large bowl, mix the chopped eggs, mayonnaise, celery, red onion, red bell pepper, parsley, Dijon mustard, garlic powder, salt, and pepper.

  2. Toast the bread slices and place lettuce leaves on four of them.

  3. Place the egg salad on top of the lettuce leaves and cover with the remaining four slices of bread.

  4. Cut the sandwiches in half and serve.
