Ingredients
- 2 cups basmati rice
- 1 lb smoked haddock, flaked
- 1 onion, diced
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp garam masala
- 1 cup frozen peas
- 4 eggs, hard-boiled and peeled
- Fresh cilantro, chopped for garnish
- Salt and pepper to taste
Instructions

Cook the basmati rice according to package instructions and set aside.

In a large pan, heat some oil and sauté the onion, garlic, and ginger until softened.

Add the spices (curry powder, turmeric, cumin, coriander, and garam masala) to the pan and cook for another minute.

Add the flaked smoked haddock to the pan and cook for a few minutes until heated through.

Stir in the cooked rice and frozen peas, then season with salt and pepper to taste. Cook for an additional 5 minutes to allow the flavors to meld.

Meanwhile, heat some oil in a separate pan and fry the hard-boiled eggs until golden brown.

Serve the kedgeree biryani hot, topped with the fried eggs and garnished with fresh cilantro.
