Ingredients

  • 4 salmon fillets, skin on
  • 1 lb new potatoes
  • 1 cup fresh parsley leaves
  • 1/2 cup fresh basil leaves
  • 2 cloves garlic
  • 2 tbsp capers
  • 2 tbsp lemon juice
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Place the salmon fillets on a baking sheet, season with salt and pepper, and bake for 15-20 minutes, or until cooked to your desired level of doneness.

  2. Meanwhile, boil the new potatoes in a pot of salted water until tender, about 10-15 minutes. Drain and set aside.

  3. In a food processor, combine the parsley, basil, garlic, capers, lemon juice, and olive oil. Pulse until smooth and well combined.

  4. In a large bowl, toss the cooked new potatoes with the salsa verde until evenly coated.

  5. Serve the salmon fillets with the salsa verde new potatoes on the side.
