Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Preparation: 10 minutes
Cooking: 20 minutes
Total: 30 minutes

Serves:

Ingredients

  • 4 red bell peppers
  • 2 cloves of garlic
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of dried oregano
  • 1/4 teaspoon of red pepper flakes (optional)
  • 1/4 cup of grated Parmesan cheese (optional)

Instructions

  1. Preheat the broiler in your oven.

  2. Place the red bell peppers on a baking sheet and broil them until the skin is blackened and blistered, turning occasionally. This will take about 10-12 minutes.

  3. Remove the peppers from the oven and place them in a bowl. Cover the bowl with plastic wrap and let the peppers steam for 10 minutes. This will make the skin peel off easily.

  4. After 10 minutes, remove the plastic wrap and peel off the skin from the peppers. Remove the seeds and stems as well.

  5. Place the peeled peppers, garlic cloves, olive oil, salt, black pepper, dried oregano, and red pepper flakes (if using) in a blender or food processor.

  6. Blend until smooth and creamy.

  7. If desired, stir in the grated Parmesan cheese for added flavor.

  8. Serve the roasted red pepper sauce over pasta, grilled chicken, or as a dip for vegetables.

  9. Enjoy!
