How To Make Red Lentil & Coconut Soup

Ingredients
- 1 cup red lentils
- 1 can (14 oz) coconut milk
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 4 cups vegetable broth or water
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

Rinse the lentils under cold water until water runs clear. Set aside.

In a large pot, heat some oil over medium heat and sauté the onion until translucent.

Add the garlic, cumin, coriander, and turmeric to the pot and cook for another minute.

Add the lentils and vegetable broth or water to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes or until lentils are cooked through and tender.

Stir in the coconut milk and season with salt and pepper. Cook for an additional 5 minutes.

Use an immersion blender or transfer the soup to a blender and blend until smooth and creamy.

Serve the soup hot, garnished with fresh cilantro.
