  • 6 medium-sized potatoes, thinly sliced
  • 1 bunch of spring onions, chopped
  • 1/4 cup of fresh dill, chopped
  • 1 cup of shredded cheese (any variety you prefer)
  • 8 eggs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9-inch baking dish.

  2. Boil the sliced potatoes in salted water for 5 minutes until slightly tender. Drain and set aside.

  3. In a large bowl, whisk the eggs. Season with salt and pepper.

  4. Layer the sliced potatoes, chopped spring onions, and dill in the greased baking dish.

  5. Pour the whisked eggs over the potato mixture, ensuring everything is evenly coated.

  6. Sprinkle the shredded cheese on top.

  7. Bake in the preheated oven for 25-30 minutes or until the frittata is set and the cheese is golden and bubbly.

  8. Remove from the oven and let it cool for a few minutes before slicing and serving.
