Ingredients

  • 6 new potatoes, thinly sliced
  • 1 onion, diced
  • 1 tablespoon olive oil
  • 6 large eggs
  • 1/4 cup grated pecorino cheese
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 350°F (180°C).

  2. Heat the olive oil in a skillet over medium heat. Add the diced onion and cook until softened.

  3. Add the sliced potatoes to the skillet and cook until tender, about 10 minutes.

  4. In a separate bowl, whisk together the eggs, pecorino cheese, salt, and pepper.

  5. Pour the egg mixture over the cooked potatoes and onions in the skillet, spreading it evenly.

  6. Cook on the stovetop for 2 minutes, then transfer the skillet to the preheated oven.

  7. Bake for 15-20 minutes, or until the frittata is set and golden on top.

  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley.

  9. Cut into slices and serve warm.
