How To Make Jacket Potatoes with Swedish Prawn Salad

Ingredients
- 4 large baking potatoes
- 1 cup cooked prawns
- 1/2 cup mayonnaise
- 2 tbsp sour cream
- 1 tbsp lemon juice
- 1 tbsp chopped fresh dill
- Salt and pepper to taste
- 4 spring onions, thinly sliced
- 1/4 cup chopped fresh parsley
Instructions

Preheat the oven to 400°F (200°C). Wash and scrub the potatoes, then pat them dry. Poke several holes in each potato using a fork.

Place the potatoes directly on the oven rack and bake for about 1 hour, or until the skins are crispy and the insides are soft.

In a bowl, combine the cooked prawns, mayonnaise, sour cream, lemon juice, chopped dill, salt, and pepper. Mix well to combine.

Once the potatoes are cooked, remove them from the oven and let them cool slightly. Cut a slit in the top of each potato and carefully push the ends towards the center to create an opening.

Fill each potato with a generous amount of the Swedish prawn salad. Top with sliced spring onions and chopped parsley.

Serve the jacket potatoes with Swedish prawn salad immediately while still warm.
