Ingredients

  • 4 large eggs
  • 1 courgette, thinly sliced
  • 1 large potato, peeled and thinly sliced
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1/4 cup of fresh mint leaves, chopped
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a large bowl, whisk the eggs and season with salt and pepper. Set aside.

  3. Heat oil in a non-stick frying pan over medium heat.

  4. Add the sliced courgette, potato, onion, and garlic to the pan. Cook until the vegetables are tender, about 10 minutes.

  5. Once cooked, transfer the vegetables to the bowl with the whisked eggs and mix well.

  6. Heat some more oil in the frying pan and pour the egg and vegetable mixture back into the pan.

  7. Cook on medium heat for 5 minutes, or until the edges start to set.

  8. Transfer the pan to the preheated oven and bake for 10-15 minutes, or until the frittata is set and golden on top.

  9. Remove from the oven and let it cool for a few minutes before serving.

  10. Garnish with chopped fresh mint leaves before serving.
