How To Make Potato & Spring Onion Breakfast Pancakes

- 2 large potatoes, peeled and grated
- 4 spring onions, finely chopped
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 1/2 cup milk
- 2 tbsp vegetable oil
Instructions

In a large bowl, combine the grated potatoes, chopped spring onions, flour, baking powder, salt, and black pepper.

In a separate bowl, mix together the beaten eggs and milk. Pour this mixture into the potato and spring onion mixture and stir until well combined.

Heat the vegetable oil in a non-stick pan over medium heat. Spoon the pancake batter into the pan, forming small pancakes.
