Ingredients

  • 2 large potatoes, peeled and grated
  • 4 spring onions, finely chopped
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • 1/2 cup milk
  • 2 tbsp vegetable oil

Instructions

  1. In a large bowl, combine the grated potatoes, chopped spring onions, flour, baking powder, salt, and black pepper.

  2. In a separate bowl, mix together the beaten eggs and milk. Pour this mixture into the potato and spring onion mixture and stir until well combined.

  3. Heat the vegetable oil in a non-stick pan over medium heat. Spoon the pancake batter into the pan, forming small pancakes.

  4. Cook for 2-3 minutes on each side until golden brown and crispy.

  5. Serve the potato and spring onion pancakes hot with your favorite condiments or toppings.
