How To Make Polenta Sweet Potato Fries with Herby Dip

- 2 large sweet potatoes, cut into fries
- 1/2 cup polenta
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Cooking spray
- Chopped fresh herbs (such as parsley, rosemary, or thyme) for garnish
- For the herby dip:
- 1/2 cup Greek yogurt
- 1 tbsp chopped fresh dill
- 1 tbsp chopped fresh parsley
- 1 clove garlic, minced
- 1 tbsp lemon juice
- Salt and black pepper to taste
Instructions

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a shallow dish, mix together the polenta, paprika, garlic powder, salt, and black pepper.

Toss the sweet potato fries in the polenta mixture, ensuring they are evenly coated.

Arrange the coated fries on the prepared baking sheet and spray them with cooking spray.

Bake in the preheated oven for 25-30 minutes or until the fries are golden and crispy, flipping them halfway through.

While the fries are baking, prepare the herby dip by combining the Greek yogurt, chopped fresh dill, chopped fresh parsley, minced garlic, lemon juice, salt, and black pepper in a bowl. Mix well.

Once the fries are done, remove them from the oven and let them cool slightly.
