How To Make Crunchy Potato Squares with Herby Salt

- 4 large potatoes, peeled and grated
- 2 tablespoons flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil, for frying
- Herby salt:
- 1 teaspoon dried parsley
- 1 teaspoon dried dill
- 1/2 teaspoon salt
Instructions

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large bowl, combine the grated potatoes, flour, garlic powder, onion powder, paprika, dried thyme, dried rosemary, dried oregano, salt, and black pepper. Mix well until everything is evenly combined.

Heat vegetable oil in a large skillet over medium heat. Take a heaping tablespoon of the potato mixture and carefully shape it into a square. Place it in the skillet and flatten it slightly with a spatula. Repeat with the remaining potato mixture, making sure not to overcrowd the skillet.

Cook the potato squares for about 3-4 minutes on each side, or until golden brown and crispy. Transfer them to the prepared baking sheet as they finish cooking.

Once all the potato squares are cooked, transfer the baking sheet to the preheated oven and bake for an additional 10 minutes to ensure they are fully cooked through.

While the potato squares are baking, prepare the herby salt. In a small bowl, combine the dried parsley, dried dill, and salt. Mix well.

Remove the potato squares from the oven and sprinkle them with the herby salt mixture. Serve hot and enjoy!
