Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1 cup quinoa
  • 2 cups chicken broth
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a small bowl, combine the Cajun seasoning, garlic powder, onion powder, paprika, and cayenne pepper.

  3. Rub the chicken breasts with the spice mixture, coating them evenly.

  4. Heat the olive oil in a large oven-safe skillet over medium-high heat.

  5. Add the chicken breasts to the skillet and cook for 3-4 minutes per side until nicely browned.

  6. Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes or until the chicken is cooked through.

  7. While the chicken is cooking, rinse the quinoa under cold water and drain.

  8. In a saucepan, bring the chicken broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed and the quinoa is tender.

  9. Fluff the quinoa with a fork and season with salt and pepper to taste.

  10. Serve the Cajun spiced chicken on a bed of quinoa and garnish with fresh cilantro.
