How To Make Cajun Spiced Chicken with Quinoa

Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional)
- 1 cup quinoa
- 2 cups chicken broth
- Salt and pepper, to taste
- 2 tbsp olive oil
- Fresh cilantro, for garnish
Instructions

Preheat the oven to 425°F (220°C).

In a small bowl, combine the Cajun seasoning, garlic powder, onion powder, paprika, and cayenne pepper.

Rub the chicken breasts with the spice mixture, coating them evenly.

Heat the olive oil in a large oven-safe skillet over medium-high heat.

Add the chicken breasts to the skillet and cook for 3-4 minutes per side until nicely browned.

Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes or until the chicken is cooked through.

While the chicken is cooking, rinse the quinoa under cold water and drain.

In a saucepan, bring the chicken broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed and the quinoa is tender.

Fluff the quinoa with a fork and season with salt and pepper to taste.

Serve the Cajun spiced chicken on a bed of quinoa and garnish with fresh cilantro.
