Ingredients
- 250g halloumi cheese, sliced
- 4 cups watermelon, cubed
- 1/4 cup fresh mint leaves, chopped
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions

Heat a grill or pan over medium-high heat.

Grill the halloumi slices for 1-2 minutes on each side, until golden brown. Remove from heat and set aside.

In a large bowl, combine watermelon cubes and mint leaves.

In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.

Drizzle the dressing over the watermelon and mint mixture and toss gently to coat.

Transfer the salad to serving plates and top with grilled halloumi slices.
