How To Make Gnocchi with Courgette, Mascarpone & Spring Onions

Ingredients
- 500g gnocchi
- 2 courgettes, sliced
- 2 spring onions, chopped
- 200g mascarpone
- 1 garlic clove, minced
- 2 tbsp olive oil
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving
Instructions

Cook the gnocchi according to package instructions. Drain and set aside.

In a large pan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.

Add the sliced courgettes to the pan and cook until tender, about 5 minutes.

Stir in the chopped spring onions and cook for an additional 2 minutes.

Reduce the heat to low and add the cooked gnocchi to the pan. Mix well.

Add the mascarpone and gently stir until it melts and forms a creamy sauce.

Season with salt and pepper to taste.

Serve the gnocchi with a sprinkle of grated Parmesan cheese on top.
