How To Make Banoffee Pecan Granola

- 2 cups rolled oats
- 1/2 cup chopped pecans
- 1/4 cup unsweetened shredded coconut
- 1/4 cup honey
- 2 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- 1 ripe banana, mashed
- 1/4 cup toffee bits
Instructions

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, mix together the rolled oats, chopped pecans, and shredded coconut.

In a separate bowl, whisk together the honey, melted coconut oil, vanilla extract, and mashed banana.

Pour the wet mixture over the dry ingredients and stir until everything is well coated.

Spread the granola mixture evenly onto the prepared baking sheet.

Bake for 15-20 minutes, stirring halfway, until golden brown and crispy.
