How To Make Vegan Burritos

A delicious and satisfying vegan burrito filled with flavorful ingredients and wrapped in a warm tortilla.

  • 4 large tortillas
  • 1 cup cooked brown rice
  • 1 cup canned black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup diced bell peppers
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Guacamole, salsa, and vegan sour cream (optional, for serving)


  1. In a large mixing bowl, combine the cooked brown rice, black beans, quinoa, diced tomatoes, red onion, bell peppers, black olives, cilantro, lime juice, olive oil, ground cumin, chili powder, salt, and pepper. Stir until well combined.

  2. Warm the tortillas in a dry skillet or microwave to make them pliable.

  3. Place a scoop of the filling mixture onto the center of each tortilla. Fold in the sides of the tortilla, then roll it up tightly to form a burrito.

  4. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or a small amount of oil. Place the burritos in the skillet, seam side down, and cook for about 3-4 minutes on each side, or until golden brown and heated through.

  5. Serve the vegan burritos with guacamole, salsa, and vegan sour cream, if desired.
