How To Make Low Carb Lentil Soup Recipe

A hearty and flavorful soup made with healthy lentils, perfect for a low carb diet.

Serves:

Ingredients

  • 2 cups of dried brown lentils
  • 4 cups of chicken or vegetable broth
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks of celery, chopped
  • 3 cloves of garlic, minced
  • 1 tbsp of olive oil
  • 1 tsp of cumin
  • 1/2 tsp of paprika
  • 1/4 tsp of cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Rinse lentils and set aside.

  2. Heat oil in a pot, sauté onion, celery, and carrots until tender.

  3. Add garlic, cumin, paprika, and cayenne pepper, stir for a minute.

  4. Pour broth and lentils in the pot, bring to a boil.

  5. Reduce heat, cover and simmer for 1 hour until lentils are soft.

  6. Season with salt and pepper.
