Ingredients

  • 4 large tomatoes, chopped
  • 1 small cucumber, chopped
  • 1 red bell pepper, chopped
  • 1/2 yellow onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 1 tsp hot sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh parsley leaves, chopped

Instructions

  1. Add chopped tomatoes, cucumber, red bell pepper, onion, and garlic to a blender.

  2. Blend until smooth.

  3. Add red wine vinegar, olive oil, hot sauce, salt, and black pepper. Blend again until well combined.

  4. Pour the soup into a large bowl and stir in the chopped basil and parsley.

  5. Cover and refrigerate for at least 2 hours before serving.
