Ingredients

  • 1 head of cauliflower, chopped
  • 2 cloves of garlic, minced
  • 1 onion, chopped
  • 2 cups of chicken broth
  • 1/2 cup of heavy cream
  • Salt and pepper to taste
  • 2 tbsp of olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the onions and garlic and sauté until fragrant.

  3. Add the cauliflower and chicken broth and bring to a boil.

  4. Reduce the heat and let simmer for 20 minutes or until the cauliflower is tender.

  5. Use a blender or immersion blender to puree the soup until smooth.

  6. Stir in the heavy cream and season with salt and pepper to taste.
