How To Make Low Carb Mushroom Soup Recipe

Ingredients
- 2 tbsp butter
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 lb mushrooms, sliced
- 3 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper, to taste
- Fresh thyme, for garnish
Instructions

In a large pot, melt butter over medium heat.

Add onion and garlic, cook until onions are translucent.

Add mushrooms and cook until soft.

Pour in broth and simmer for 15 minutes.

Use an immersion blender or transfer to blender to puree the soup.

Add heavy cream and continue to cook for another 5 minutes.

Season with salt and pepper to taste.
