Ingredients

  • 3 cups broccoli florets
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups shredded cheddar cheese

Instructions

  1. In a pot, saute onion and garlic until softened.

  2. Add in broccoli florets and chicken broth. Bring to a boil and simmer for 10 minutes.

  3. Puree the soup using an immersion blender or transfer to a blender and blend until smooth.

  4. Add in heavy cream, salt, and pepper, and stir until combined.

  5. Gradually stir in shredded cheddar cheese until melted.

  6. Serve hot and enjoy!
