Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can diced tomatoes
  • 1 can beef broth
  • 1 can Rotel tomatoes
  • 1 cup chopped cauliflower
  • 1 cup chopped zucchini
  • 1/2 cup chopped bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup grated cheddar cheese

Instructions

  1. In a large pot, brown the ground beef with the onion and garlic over medium-high heat.

  2. Add the chili powder, cumin, paprika, oregano, salt, and black pepper. Stir well.

  3. Add the diced tomatoes, beef broth, and Rotel tomatoes. Stir well and bring to a boil.

  4. Reduce heat and add the cauliflower, zucchini, and bell pepper. Simmer for 15-20 minutes, until the vegetables are tender.

  5. Serve topped with cilantro and cheddar cheese.
