How To Make Low Carb Taco Soup Recipe

Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 can diced tomatoes
- 1 can beef broth
- 1 can Rotel tomatoes
- 1 cup chopped cauliflower
- 1 cup chopped zucchini
- 1/2 cup chopped bell pepper
- 1/4 cup chopped fresh cilantro
- 1/4 cup grated cheddar cheese
Instructions

In a large pot, brown the ground beef with the onion and garlic over medium-high heat.

Add the chili powder, cumin, paprika, oregano, salt, and black pepper. Stir well.

Add the diced tomatoes, beef broth, and Rotel tomatoes. Stir well and bring to a boil.

Reduce heat and add the cauliflower, zucchini, and bell pepper. Simmer for 15-20 minutes, until the vegetables are tender.
