How To Make Low Carb Ground Turkey and Eggplant Parmesan Recipe

A healthy, low carb version of classic Eggplant Parmesan made with ground turkey and baked to perfection.

Ingredients

  • 1 large eggplant, sliced into rounds
  • 1 lb. ground turkey
  • 1 cup low carb marinara sauce
  • 1/4 cup grated parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • Salt and pepper
  • Olive oil

Instructions

  1. Preheat oven to 400°F.

  2. Sprinkle eggplant rounds with salt and let sit for 20 minutes to remove excess moisture. Rinse and dry.

  3. In a large skillet, cook ground turkey over medium heat until browned.

  4. Add garlic powder, onion powder, dried basil, and dried oregano to ground turkey and stir to combine.

  5. In a separate skillet, heat olive oil over medium heat. Add eggplant rounds and cook until browned on both sides.

  6. Layer a small amount of marinara sauce on the bottom of a baking dish. Add a layer of eggplant rounds, followed by a layer of ground turkey. Repeat until all ingredients are used up, ending with a layer of marinara sauce on top.

  7. Sprinkle parmesan and mozzarella cheese on top of the marinara sauce.

  8. Bake for 25 minutes, or until cheese is melted and bubbly.

  9. Serve hot.
