How To Make Low Carb Ground Turkey and Eggplant Parmesan Recipe
A healthy, low carb version of classic Eggplant Parmesan made with ground turkey and baked to perfection.

Ingredients
- 1 large eggplant, sliced into rounds
- 1 lb. ground turkey
- 1 cup low carb marinara sauce
- 1/4 cup grated parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. dried basil
- 1 tsp. dried oregano
- Salt and pepper
- Olive oil
Instructions

Preheat oven to 400°F.

Sprinkle eggplant rounds with salt and let sit for 20 minutes to remove excess moisture. Rinse and dry.

In a large skillet, cook ground turkey over medium heat until browned.

Add garlic powder, onion powder, dried basil, and dried oregano to ground turkey and stir to combine.

In a separate skillet, heat olive oil over medium heat. Add eggplant rounds and cook until browned on both sides.

Layer a small amount of marinara sauce on the bottom of a baking dish. Add a layer of eggplant rounds, followed by a layer of ground turkey. Repeat until all ingredients are used up, ending with a layer of marinara sauce on top.

Sprinkle parmesan and mozzarella cheese on top of the marinara sauce.

Bake for 25 minutes, or until cheese is melted and bubbly.
