Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp red pepper flakes
  • 4 cups low sodium chicken broth
  • 1 cup water
  • 6 cups baby spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add the ground turkey and cook until browned, breaking it up into small pieces as it cooks.

  2. Add in the diced onion and minced garlic, stirring to combine. Cook for 2-3 minutes until the onions are translucent.

  3. Add the dried oregano, dried thyme, and red pepper flakes to the pot. Stir to combine with the turkey and onion mixture.

  4. Pour in the chicken broth and water, stirring to combine. Bring the soup to a simmer and let cook for 10-15 minutes.

  5. Add the baby spinach to the pot, stirring until it wilts down into the soup.

  6. Season with salt and pepper to taste.

  7. Serve hot and enjoy!
