Ingredients

  • 1 cup fresh raspberries
  • 1/4 cup low-fat Greek yogurt
  • 1/4 cup skim milk
  • 1/4 cup all-purpose flour
  • 2 egg whites
  • 1/4 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp cream of tartar
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F.

  2. In a blender or food processor, puree the raspberries until smooth.

  3. In a mixing bowl, whisk together the yogurt, milk, flour, and raspberry puree until smooth.

  4. In a separate mixing bowl, beat the egg whites until frothy.

  5. Add in the sugar, vanilla extract, cream of tartar, and salt and continue to beat until stiff peaks form.

  6. Gently fold the egg white mixture into the raspberry mixture until just combined.

  7. Divide the mixture equally between four ramekins.

  8. Bake for 20 minutes or until the souffles have risen and are lightly browned on top.

  9. Serve immediately.
