Ingredients

  • 4 pineapple rings (canned in juice, drained)
  • 1/4 cup of brown sugar
  • 1/4 cup of unsweetened applesauce
  • 1/4 cup of Greek yogurt
  • 1/2 cup of all-purpose flour
  • 1/4 cup of whole wheat flour
  • 1/4 cup of granulated sugar
  • 1 tsp of baking powder
  • 1/4 tsp of baking soda
  • 1/4 tsp of salt
  • 1 egg
  • 1/2 tsp of vanilla extract

Instructions

  1. Preheat oven to 350°F.

  2. Arrange pineapple rings on the bottom of a 9-inch cake pan. Sprinkle brown sugar over the pineapple.

  3. In a mixing bowl, combine applesauce, Greek yogurt, all-purpose flour, whole wheat flour, granulated sugar, baking powder, baking soda, salt, egg, and vanilla extract. Mix well.

  4. Pour cake batter over the pineapple.

  5. Bake for 35 minutes or until a toothpick inserted in the center of the cake comes out clean.

  6. Let the cake cool for 5 minutes before inverting onto a plate.
