This low-carb version of a classic dish is made with cauliflower rice instead of regular rice.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 head cauliflower, riced
- 1 cup shredded cheddar cheese

Heat olive oil in a large pan over medium heat.
