  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 can (8 oz) pineapple chunks, drained (reserve juice)
  • 1/2 cup gluten-free ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 tbsp gluten-free soy sauce
  • 1 tbsp cornstarch
  • Salt and pepper, to taste

Instructions

  1. Place chicken in slow cooker and season with salt and pepper.

  2. In a separate bowl, whisk together reserved pineapple juice, ketchup, vinegar, brown sugar, soy sauce, and cornstarch.

  3. Pour sauce over chicken in slow cooker.

  4. Add bell pepper, onion, and pineapple chunks to slow cooker.

  5. Cook on low for 3-4 hours or until chicken is cooked through and vegetables are tender.
