  • 1 cup dry red lentils, rinsed and drained
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 can diced tomatoes (14 oz)
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper, to taste

Instructions

  1. Add all ingredients into slow cooker and stir to combine.

  2. Cover and cook on low for 6-8 hours or high for 3-4 hours until lentils are tender.

  3. Season with salt and pepper to taste.
