Ingredients

  • 12 oz. of gluten-free spaghetti
  • 2 tbsp of olive oil
  • 3 cloves of garlic, minced
  • 8 oz. of sliced mushrooms
  • 1/2 cup of vegetable broth
  • 1/2 cup of unsweetened almond milk
  • 1/4 cup of nutritional yeast
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the spaghetti according to package instructions.

  2. While the pasta is cooking, heat olive oil in a pan over medium heat.

  3. Add garlic and sauté for 1-2 minutes until fragrant.

  4. Add mushrooms and cook until golden brown, about 5-7 minutes.

  5. Add vegetable broth, almond milk, and nutritional yeast to the pan. Stir until well combined.

  6. Let simmer for 2-3 minutes until the sauce thickens.

  7. Season with salt and pepper to taste.

  8. Drain the pasta and add it to the pan with the mushroom sauce.

  9. Toss the pasta until it’s coated in the sauce.

  10. Serve hot with fresh parsley for garnish.
